I am a total popcorn fanatic. My favorite christmas gift used to be the cheesy/caramel/salted popcorn tri packs you’d get from your uncle’s cousin twice removed. However, I was getting totally sick of the microwave stuff and frankly thought it was pretty nasty. So, I was looking for a fresh popped alternative that was simple, easy and delicious.
ENTER IN: My Favorite Homemade Popcorn Recipe Ever. On my way to the farm, after a long day of riding, or sitting ring side at a horse show this homemade popcorn is my ALL TIME FAVORITE SNACK. I found the recipe online years ago and want to share it with you!
It takes just 1 pot and 2 ingredients and is a cheap, healthy alternative to the store bought popcorn. Enjoy!
- 1/3 cup popcorn kernels
- 3 TBSP Coconut Oil
In a 3 qt. pot melt the Coconut Oil over medium-high heat until no solids remain. Add 3-4 kernels to the pot. As soon as those kernels pop add in the remaining 1/3 c of kernels, cover, and remove from heat. Count for 30 seconds then return pot to burner.
The kernels should begin popping shortly after returning them to the burner. Wait until there is 1-2 seconds between pops then remove from heat. (The popcorn will fill the pot, but I’ve never had it explode) Season as you like and serve immediately!
**For crispier popcorn vent the cover on pot a little bit. It will let the steam escape.
**Resist the urge to shake the pot. When I was growing up it was a cardinal sin if you didn’t shake the pot to keep the kernels from sticking. Well I can guarantee you this recipe comes out better if you let those kernels be!
**My all time favorite seasoning is Trader Joes’s Himalayan Salt. Sprinkle it over the top and VOILA! Deliciousness.
